Finely dice 1/2 a red, yellow, orange or green bell pepper. Go for a nice color combination.
Finely dice one stalk of celery.
Finely dice 1 to 2 cloves garlic.
Finely dice 1/2 a medium onion.
Cut 2 boneless chicken breasts into bite-sized pieces.
In a pan (do NOT use a non-stick pan for this, you want evaporation to take place) over medium to medium high heat put in 1/3 stick of butter or margarine and 1/3 cup of olive oil. Put in chicken, lightly stir and saute until cooked through, about 6+ minutes. Then add veggies. Saute on medium heat while pasta cook.
In a pot bring water to boil and cook angel hair (vermicelli) pasta via box instructions. Drain pasta, add to chicken and veggies, lightly fold pasta into chicken mixture.
Salt, pepper, couple dashes dried oregano and fresh shaved Romano cheese to top.
